Anyway, I have been given a recipe from a very good family friend, and I think you will all enjoy it!!
This is a base recipe so you can experiment by adding what you like. I do choc chips.
So here it is:
Makes 12 (double the mixtures to make 24)
6 ounces (175g) Self Raising
6 ounces (175g) Caster Sugar
6 ounces (175g) Margarine
3 Eggs
Optional
Choc Chips
Jam (any)
Fruit

Method:
Preheat oven 180c or 160c fan force.
Melt Margarine, Add all the ingredients in a mixing bowl, mix well.

Put patty pans, in muffin tray. I add a few choc chips in the bottom of the patty pan then I spoon in the mixture, then I add a few choc chips on top of each cupcake.
Then Bake for about 15 mins to 20 mins or until done, keep checking if you are not sure. Use a toothpick to check.
Make sure to let them cool if you are going to do icing or freeze.
So after crunching some dollar figures I worked out that 12 cupcakes cost me around $2.50. Not bad!!! I doubt you can buy 12 cupcakes for that price. So after some more figure crunching that would be $5 for 24 cupcake... AWESOME!!!

By the Way, these are large cupcakes.
This picture is the same cupcakes recipe, however we did a butter cream icing for my 2 years olds birthday. These too can be frozen.
Another great thing about these cupcakes is that you can freeze them, I will make a few dozen and pop them in a zip lock bag, and freeze. EASY!!!
