CupCakes YES PLEASE!!

You have to admit, most people love a good cupcake. However, making them can be somewhat painful. ' I reckon baking in general can be somewhat painful'



Anyway, I have been given a recipe from a very good family friend, and I think you will all enjoy it!!

This is a base recipe so you can experiment by adding what you like. I do choc chips. 

So here it is:
Makes 12 (double the mixtures to make 24)

6 ounces (175g) Self Raising
6 ounces (175g) Caster Sugar
6 ounces (175g) Margarine
3 Eggs

Optional
Choc Chips
Jam (any)
Fruit
ETC

Method:
Preheat oven 180c or 160c fan force.
Melt Margarine, Add all the ingredients in a mixing bowl, mix well.

Put patty pans, in muffin tray. I add a few choc chips in the bottom of the patty pan then I spoon in the mixture, then I add a few choc chips on top of each cupcake.

Then Bake for about 15 mins to 20 mins or until done, keep checking if you are not sure. Use a toothpick to check.

Make sure to let them cool if you are going to do icing or freeze.

So after crunching some dollar figures I worked out that 12 cupcakes cost me around $2.50. Not bad!!! I doubt you can buy 12 cupcakes for that price. So after some more figure crunching that would be $5 for 24 cupcake... AWESOME!!!
By the Way, these are large cupcakes.

This picture is the same cupcakes recipe, however we did a butter cream icing for my 2 years olds birthday. These too can be frozen.

Another great thing about these cupcakes is that you can freeze them, I will make a few dozen and pop them in a zip lock bag, and freeze. EASY!!!

Great for lunch boxes or parties. ENJOY!!

Lemon Cheesecake Recipe

SIMPLE IS BEST!!

Most of us love desserts, well I know my household do, but some of the desserts these days and long ago can be quite difficult and take time it all the prep work. Well, not when I am making them, this recipe for Lemon Cheesecake has been given to me mainly because it is super simple. It was given to me from a very close family friend.

INGREDIENTS:
BASE
1 packet of Nice Biscuits
120g of Melted Butter
MIDDLE
250g of either Mascapone or Cream Cheese ( I used cream cheese)
300ml of Thickened Cream
2/3 Lemons for juice and 1 or 2 lemons for zest.

METHOD:
First crush the Nice Biscuits and mix with the melted butter. Then pour mixture into a cake tin and flatten down.




Mix Cream Cheese, Thickened cream, Juice and Zest in a mixer. Mix for a few minutes.




Once nice and smooth pour on top of the biscuit base.

Cover with aluminum foil and cling wrap and pop into the Freeze

Bring out and defrost a few hours before servicing. (defrost in fridge)

Super Easy Cheap Potato Bake.

As mentioned in other food blogs I am not one for complicated recipes.

So I am going to share with you, this weeks theme recipe.

 Potato Bakes are known for using cream and cheese and all the good stuff that are not that good for us, well my recipe isn't healthy but isn't that unhealthy either.


Ingredients:
9 to 10 medium Potatoes.
1 Onion
250 to 300 grams of Ham or Bacon
Cup of Peas
Cup of Corn
Cream Cheese
Milk
Flour
French Onion Soup
Cheese
Salt and Pepper

Method:
Peel and thinly slice potatoes, place in pot or microwave dish and semi cook.



Chop Onion and bacon or ham peas and corn and semi cook in fry pan or microwave dish. Place all semi cooked ingredients into a baking tray and let rest.



Heat up 250mls to 500mls of Milk and add Cream Cheese, over a low heat stir until cream cheese is melted, added 2 teaspoons of French onion soup mix the dried kind in and stir. Once a slow boil appears make a paste with flour (I rather cornflour) flour and milk mix together and stir into Cream cheese mix.



Once the mixture has thicken like a white sauce add to the baking dish and stir everything thoroughly. Add salt and pepper to taste and sprinkle some grated cheese over the top and bake for around 30min on 180c or 150c fan force or until the cheese is melted and golden.




Once cooked service and enjoy.

Tasty Tiramisu with YIAH ingredients.

Like most people I love a great dessert but I hate the preparation & the tricky parts. So I have found a dessert that not only is an oldie but I have added my lazy spin on it.



Ingredients:

  •  YIAH Tiramisu Chocolate powder


METHOD

STEP 1 brew a strong couple of cups of coffee. Let it cool down to room temperature in a shallow dish. (You can also add Marsala or I have added Irish cream before yum yum, but this is a kid friendly recipe so no alcohol in this one.)

STEP 2 Beat egg yolks and sugar in a large bowl with electric beaters until pale and thick. Add the mascarpone, whipped cream and a few tablespoons of YIAH Tiramisu Chocolate powder, mixing gently until just combined.



STEP 3 Beat egg whites in a medium bowl with electric beaters until soft peaks form. Using a large metal spoon, gently fold eggwhites into the mascarpone mixture.




STEP 4 Dip enough biscuits into the coffee mixture to cover the base of a 19cm square ceramic dish. Cover the biscuits with one-third of the mascarpone mixture. Repeat layers 2 times, ending with the cream. Cover with plastic wrap and refrigerate for at least 2 hours. Dust generously with the YIAH Tiramisu Chocolate Powder.





So it might not look super special but then again I am pretty lazy when it comes to cooking, as long as it taste fantastic my family will never complain.

Kransky's & Chickpea Slow Cooked

When it comes to cooking I will admit I am not a fan of the prep work involved. Don't get me wrong I love all foods and really enjoy a well cooked meal. However, big recipes and lots of prep work do my head in. Who has the time these days to prepare a busy meal?? So in my food file blogs you will notice all my recipes will be QUICK, EASY and just plan YUMMY. I will warn you however, that I am not one for measuring, I am more of a throw in the pan and taste as you go kind of girl. This and many more of my dishes comes from the BEST cook I know my MUM, so enjoy as I have for many years.

Kransky's & Chickpeas

INGRENDENTS:
6 to 8 Cheese or normal Kransky's
Tin or chickpeas
Tin of Diced tomatoes
Pack of Egg Noodles
Onion
Mixed Herbs
1 Tablespoons Minced Garlic
Salt & Pepper

METHOD:
Chop kransky's into to rounds, dice onion, place all into a slow cooker bowl along with the minced garlic. Mix around, add your tin of chickpeas and diced tomatoes. Season with salt and pepper & mixed herb. Cook on AUTO or LOW for most of the day. One and half hours before serving add
your egg noodles and mix in well.



















A MUST: after you throw the egg noodles in, grab a glass and pour a wine, and sit back and relax. (yes, I know most of us cant, Just dream you are then)
